Good Morning guys! By the time you are reading this I should be on an airplane to Mexico with Pete and the kids for a short vacation. While I am excited, the dynamics of this trip have suddenly changed. I have shingles. On my face. Ha!
Remember a few weeks ago when I was like high-fiving myself for my ah-mazing immune system? Well, I guess the stress of the world has gotten to me and given me a pretty serious smack (on the face!) I noticed things were going all wrong by Saturday when I went to an urgent care clinic thinking I had strep throat, then by Sunday I started to get an inkling of what is really going on because my dad had shingles (also on his face) last Spring. Monday I was diagnosed, passed around a couple doctors (optometrist) and medicated. The good news is it’s on the mild side, it’s being treated in a SERIOUS way with every possible pharmaceutical and homeopathic remedy I know about (please let me know if you have any advice though!) and I am headed to Mexico to do nothing but rest- which has proved surprisingly difficult to do at home. My poor family will have to be seen out in public with the swamp monster, but other than that I am happy to be going to go spend quite time with them.
And doesn’t guacamole fix most things? Well, usually I say tequila is the best medicine, but I will be skipping that for a few more days. Please feel free to follow along on insta-stories, and don’t expect any selfies!
Ok, enough of that fun business. I have an awesome salad for you guys. An updated Cobb salad with smoky beet dressing. OMG- this is just so seriously delicious you guys! Please try soon and let me know what you think!
- Cobb Salad
- 1 head iceberg lettuce, chopped into bite sized pieces
- 2 cups shredded cooked chicken
- 4 strips crispy cooked bacon, crumbled
- 1 cup cherry tomatoes, halved
- 1 avocado, large diced
- ½ small red onion, thinly sliced
- 2 cups blanched green beans, quartered on a bias
- 2 cups cooked beets, sliced into wedges
- Smoky Beet Dressing
- ¼ cup cooked beet chunks
- 2 garlic cloves
- 2 teaspoons smoked paprika
- ¼ cup red wine vinegar
- ¼ cup olive oil
- kosher salt to taste
- Arrange all of the salads ingredients on a platter. (I like to arrange them by ingredients on the bed of iceberg lettuce myself!)
- For the Smoky Beet Dressing:
- In the jar of a blender combine the beets, garlic, red wine vinegar and olive oil and puree on high until smooth. Season to taste with kosher salt. Drizzle the salad with the Smoky Beet Dressing and serve more on the side.

This looks AWESOME!! Can’t wait to try it!
Wishing you a speedy recovery from the shingles!
Many thanks Kathie 🙂
Look at this gorgeous colorful salad?! Need!
Heather, I have read that a clay poultice helps with shingles (I use the brand Redmond Clay). Can’t tell you first-hand that it works, but there are a lot of testimonials on the internet and I have used clay for various other infections (tooth pain, mosquito bites, joint inflammation) with success. Good Luck!
PS – I love your recipes and am enjoying working through your “pure delicious” cookbook!
Thank you so much Jane- I have not heard of that before, but Ia m open to all suggestions- i love natural remedies and will look into this! So happy that I can be a help with the recipes!
I love the addition of smoked paprika! Have a great trip!
Thank you Maria 🙂

What a gorgeous cobb salad!
Hoping you feel better soon!! Relax and enjoy your time in Mexico!!
thank you so much Julie 🙂
Bummer that sucks! Before you got sick you mentioned doing a 30 minute Valentine’s Day meal… could you do that at some point for a Friday night dinner party meal? We always seem to end up hosting Friday after work and that doesn’t seem to leave time for much of anything.
Yes Amanda- I absolutely totally will. I am feeling so much better so maybe I can do that next week 🙂
Im so sorry about the shingles! Check out anthony william medical medium podcast on shingles.. Its very informative with insights you will not gain from mainstream medical visits. He also lists the supplements herecommends on his website. Silver kills viruses on contact as does many herbs.. The amino acid l lysine is very powerful antivirus as well. You will love the podcasts. Viruses do not like zinc.. Our immune systems are all depleted of this.. Hope you find ithelpful 🙂
Thank you so much C! I literally have been on Colloidal Silver, mass doses of Lysine, zinc and crazy amounts of vitamins C, D and B’s (thanks mostly to readers recommendations!) I am doing SO much better and can’t wait to check out the podcast- I have heard about him from several people and ordered his book!
